A Picker chooses at random when you press it. It lives in the palette's Tools category, one of the six Collaborate categories (and in Plan mode's Tools category).
What it picks from
Either one of the people currently in the room, or one of the options you write. Right-click the Picker and open Picker: choose People Here (the default) or A List, and a list gets an Options box, one entry per line, up to 24 of them. A list with nothing in it shows "Nothing to pick from".
People Here means whoever is in the room at the moment you press it, so it can only pick somebody who is actually there. Alone, it picks you.
Give the Picker a label to say what it is choosing ("Who demos?"); the label sits small above the result.
Rolling it
Press Pick. It spins the candidates past and slows to a stop on the answer over about a second and a half. People appear with their own avatar as they go by. Once it has landed the button reads Again, for another roll.
Everyone watches the same roll, not just whoever pressed it: the spin plays on every screen in the room and every one of them lands on the same name. That is the point of rolling on the canvas rather than saying a name out loud.
Only people with edit rights can spin it. On a Participant or Viewer share link the Picker shows its result as it lands, with no button to press.
While somebody holds the facilitator role, the room's answer is theirs to land. Other editors can still spin, but their roll plays on their own screen only and isn't saved.
A drag moves the Picker rather than rolling it, so you can rearrange the canvas without setting it off.
